What is Cocoa Powder?

Cocoa powder is a fine powder made from roasted, ground cocoa beans. After extracting cocoa butter from cocoa liquor, the remaining solids are crushed into this powder. It comes in natural (acidic, with a bold, bitter taste) and alkalized (dutch-processed, milder, darker) forms.
