What is Lactobacillus helveticus?

Lactobacillus helveticus is a Gram positive, facultative anaerobic lactic acid bacterium named after its initial isolation from Swiss cheese. It can ferment lactose to produce lactic acid, has strong acid resistance, and is widely used in dairy product processing, such as making cheese and yogurt, which can improve product texture and flavor. At the same time, it can produce antibacterial substances (such as bacteriocins) to inhibit harmful bacteria, and can also break down milk protein to produce small molecule peptides. Some strains have been studied and believed to have certain benefits for intestinal health, making it an important strain in the food industry and probiotics field.
