What is Lactobacillus delbrueckii subsp. Bulgaricus?

It is a Bulgarian subspecies of Lactobacillus delbrueckii, a Gram positive bacterium that is non spore forming and non motile, and is one of the core strains of fermented dairy products.

It naturally exists in milk and is named after the first isolation by Bulgarian scientists in 1905. It can break down lactose to produce lactic acid, lower the pH value of dairy products, solidify proteins to form a yogurt texture, and also produce antibacterial substances to help extend the shelf life of products. At the same time, its metabolites may be beneficial to human intestinal health.
