What is Lactococcus Lactis subsp. Cremoris?

Lactococcus Lactis subsp. Cremoris is a Gram positive, facultative anaerobic lactic acid bacterium, without spores, arranged in short chains or pairs.

It is widely present in raw milk and is the core strain for dairy fermentation. It can break down lactose to produce lactic acid, solidify milk protein, and produce substances such as butanedione, giving yogurt and cheese (such as cheddar cheese) a refreshing flavor and delicate texture. It is also highly safe and widely used in the food industry, as well as in probiotic related research.
